Andrea Poli’s cuisine was born in Paris. The authentic one, the one hidden behind the mask of the glittering Eiffel Tower and the majestic Notre-Dame. From this experience comes his most precious memory. Through his dishes he wishes to recreate that emotion, concealing when necessary their very nature. Not to deceive, but to make their discovery all the more wonderful. A cuisine that loves experimenting with new flavors, creating unexpected combinations and transforming simple ingredients into dishes that conquer the palate and the soul.
